So, what is Falafel?

A Light, healthy, vegan, easy and cheap to make at home Mediterranean vegetable bites, usually served as a side dish or as a main meal if rolled up into a sandwich with special pita bread …a traditional dish in Turkey and Middle East, and now in restaurants around the globe.
Ingredients:
  • Chickpea Fritters
  • Lots of infused Spices and Herbs
  • Onions
  • Garlic
  • Vegetable Frying Oil

  • Soak Chickpeas for at least 24 hours
  • Drain and rinse
  • Chop fresh Parsley, Cilantro, some red Onions and Garlic
  • Mix with squeezed Lemon, Cumin and Coriander seeds
  • Add little Cayenne, Salt, little Flour and Baking Soda
  • Fold and mix thoroughly
  • Shape into mini balls or use molding
  • Fry in hot Vegetable Oil

Cooking Tips:
  • Toast all spices seeds (optional – you can by all means, just use cumin & coriander powder)
  • Grind the spices or use already ground spices if you wish (avoid over-grinding spices)
  • Next is the filling, do this in two steps (because too many greens at one time and it wouldn’t grind properly), so do half of the chickpeas, half of the herbs, you can do all the cilantro the parsley or half-and-half
  • Then just do half of the onions and half of the garlic
  • Mix everything until your chickpeas have really broken down quite a bit
  • You can use canned chickpeas if you prefer, the chickpeas would already be cooked therefore you need to be careful not to end up with a mushy puree
  • Add some salt and cayenne for a little bit of heat
  • Add some flour and baking soda
  • Carefully fold all the mixture together and mix until it’s well combined
  • Cover pot and let it rest in the fridge for about an hour
  • Start rolling the dough/filling (it may look loose but don’t worry, it will hold – do not compact too much)
  • Make sure oil is heated to around 375 degree Fahrenheit (double heat it because once you add too many, that’s when the oil temperature drops and your Falafel will disintegrate)
  • Let the Falafel ball cook for around two or three minutes (keep an eye on the mixture)
  • You can make a little lemon tahini sauce for dipping or to drizzle over the cooked Falafel

Serving Tips:
 
  • Serve your Falafel nice and crispy
  • You can serve Falafel on a plate with a drizzle of the tahini sauce
  • You can serve on a bed of lettuce with a small side bowel of tahini sauce
  • You can roll in a sandwich (perhaps pita bread), with diced lettuce, tomatoes, some cucumber pickles and tahini drizzled on top
